The Salmon

Salmon is an oily, rich and flaky fish. The best wine for it really depends on how the fish is prepared and what dressing is used in the dish. At our restaurant we keep it simple; grilling our succulent fish steaks to perfection before seasoning them with salt and freshly ground black pepper.

The grilled salmon plate at O’Oliviero comes with a zesty lemon slice to highlight the fresh taste of the fish, and is served with grilled seasonal vegetables, hearty potato wedges, and a crisp salad. With or without drizzled lemon, a full-bodied white wine is the perfect accompaniment for this dish.

As a general rule, rich oily fish like salmon pairs beautifully with full-bodied white wines like oak-aged Chardonnay, Viognier, Marsanne, Sauvignon Blanc and White Pinot Noir.

However, depending on the preparation, cooking and dressing, you can be adventurous with your wine selection and choose some rosé and light-bodied red wines.

The Wine and Salmon

In our Italian restaurant, a bright white wine is our recommended accompaniment for the grilled fish. The best pairing from our wine selection is Gavi di Gavi. This white wine is crisp and nutty, making it the perfect partner for this meal.

Our salmon steak with a squeeze of lemon, paired with a cool glass of Gavi di Gavi is a great choice for spring.
